Spring is an exciting month for everyone at Devonshire Hotels & Restaurants...

With the promise of warmer days and lighter evenings, but for the Devonshire Chefs, spring brings with it an anticipation of a new season’s ingredients and a new lease of life at the hotels and inns: Our gardens are once again coming into bloom offering a bounty of salads, herbs and vegetables.

In the Burlington restaurant at The Devonshire Arms at Bolton Abbey, head chef Steve Smith enthuses about some of the ingredients that you might find making their way onto the menus, a popular choice is broad bean and pea flowers, which add a touch of colour to the plate.

Dan Field, head chef at The Devonshire Brasserie & Bar at Bolton Abbey says: “The spring and summer months bring a whole different style to the menus, we move away from root vegetables and heavy dishes to more delicate ones such as light subtle salads and young spring lamb”.

Devonshire Chefs Events:

Some miles away at The Devonshire Arms at Pilsley, head chef Paul Miller, and chef patron, Alan Hill are eagerly anticipating the second Pilsley Beer Festival when they both get the chance to step out of the confines of the kitchen and into public view. Last year the lamb spit roast was a huge success (nearly as much so as the selection of 20 local beers on offer!), and this year we have moved the event into May in the hope that they can catch some rays whilst manning the barbecue!

All of the Devonshire Chefs have been busy over the cooler months making plans for the next twelve months, in addition to the Pilsley Beer Festival; we are delighted to announce that we will definitely be holding a second Devonshire Food Festival at Bolton Abbey from Monday 19th to Sunday 25th November 2012! The Devonshire Fell is taking part in Grassington Festival’s “Cultural Flavours” events, hosting a dinner on Monday 25th June 2012. Taking inspiration from our French manager’s culture, the event will have a fun French theme:

Polly-Vu Francais: a journey of French music and dancing, and of course fabulous French cuisine, from 7pm. Click here for further details.

New menus and other news from the Devonshire Chefs:

The Devonshire Fell and The Devonshire Arms at Beeley have both launched new menus in time for spring. The Devonshire Arms at Beeley has a new lunch menu, offering local, seasonal dishes for under £15 for two courses and under £20 for three courses.

The Devonshire Fell has launched a new Lunchtime Burger Menu. Much more than your typical burger in a bun, the team have created an exciting selection of gourmet burgers including one designed by manager, Stephane; the French Burger. Each burger is served with onion rings, mixed leaves and your choice of vanilla or chocolate milkshake, all for just £12.50.
